  • 3 tablespoons raw honey (or maple syrup)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prep the Peaches: Use the blanch-and-shock method to easily peel the peaches. Remove pits and chop the peaches into small pieces.
  2. Simmer: In a large saucepan, combine the chopped peaches, honey (or maple syrup), and lemon juice.
  3. Simmer over low heat for 60–70 minutes, stirring occasionally, until the mixture thickens and becomes rich and spreadable.
  4. Blend or Mash: For a chunky finish, mash with a fork. For a smooth finish, use an immersion blender or food processor.
  5. Store: Let the mixture cool, then transfer to clean, airtight jars. Store in the refrigerator for up to 3 weeks or freeze for up to 6 months.
