Ingredients
1 cup pistachio nuts, shelled
1 cup Medjool dates, pitted
1/2 cup cocoa powder
1/4 cup almond butter
1/4 cup shredded coconut (optional)

In a food processor, combine the pistachio nuts, Medjool dates, cocoa powder, almond butter, and shredded coconut (if using).
Process until the mixture is finely blended and sticks together.
Line a baking dish with parchment paper.

Refrigerate for at least 30 minutes until firm.
Cut into squares and enjoy!
