- 1 cup pecans, finely chopped or processed
- 1/2 cup grated Parmesan cheese
- 3/4 cup breadcrumbs (panko gives extra crunch)
- 1–2 teaspoons garlic powder
- 1 teaspoon smoked or sweet paprika
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon ground black pepper
- 2 large eggs, whisked
- Cooking spray (olive oil or avocado oil spray)
- Optional: a pinch of cayenne or chili powder for heat
Instructions
- Preheat air fryer to 375°F (190°C).
- Combine pecans, Parmesan, breadcrumbs, and spices in a bowl. Mix thoroughly.
- Whisk eggs in another bowl until smooth and slightly frothy.
- Dip each chicken strip in the eggs, then coat thoroughly in the pecan mixture, pressing firmly.
- Place the coated tenders in a single layer in the air fryer basket; avoid overcrowding. Lightly spray the tops with cooking spray.
- Cook for 10 to 12 minutes, flipping halfway through, until golden and an instant-read thermometer reads 165°F (74°C).
- Serve immediately with your favorite dipping sauce.
Notes
For the crispiest finish, make sure the pecans are chopped consistently and avoid overcrowding the air fryer.
