Ingredients
- Lemon juice, fresh squeezed, 3 tablespoons
- Kashmiri chilli powder or paprika, 1.5 teaspoons
- Salt, ½ teaspoon
- Whole chicken, 1 (4.7lb/2.1 kg), preferably organic
- Yogurt (plain & whole milk), 1 cup
- Salt, 1.5-2 tablespoons
- Garlic paste, 2 tablespoons
- Ginger paste, 1.5 tablespoons
- Kashmiri chilli powder, 2 tablespoons
- Red chilli powder, 1.5 teaspoons
- Turmeric powder, ¼ teaspoon
- Garam masala, 1 tablespoon
- Coriander powder, 2 teaspoons
- Super fine almond flour or cashew powder (optional), 1.5 tablespoons
- Ground black pepper, 1 teaspoon
- Ground cumin, 1 teaspoon
- Kasuri methi (dry fenugreek leaves), 1.5 tablespoons
- Mustard oil or ghee, 3 tablespoons
- Red food color (optional), ⅛ teaspoon
Instructions
- Start by thoroughly cleaning the whole chicken and patting it dry with paper towels. Use a sharp knife to make deep diagonal cuts into the chicken to allow the marinades to penetrate deeply.
- Prepare the first marinade by mixing lemon juice, Kashmiri chilli powder, and salt in a bowl. Rub this mixture all over the chicken, ensuring that it gets into all the cuts and cavities. Let it rest for at least 15-30 minutes.
- For the second marinade, combine yogurt, salt, garlic paste, ginger paste, Kashmiri chilli powder, red chilli powder, turmeric, garam masala, coriander, almond flour, black pepper, cumin, kasuri methi, mustard oil, and optional food color. Coat the chicken thoroughly with this marinade, cover, and refrigerate for at least 4 hours, or ideally overnight for better results.
- Preheat your air fryer to 360°F (180°C). Place the marinated chicken in the air fryer basket, breast side down, and cook for 30 minutes.
- Pause the cooking, turn the chicken over, baste with a little oil if needed, and continue cooking for another 25-30 minutes or until the chicken is cooked through and the skin is crispy.
- Once cooked, allow the chicken to rest for a few minutes before carving. Present the chicken whole on a large platter, garnished with fresh herbs like cilantro or mint. Serve with a side of sliced red onions, lemon wedges, and a cool cucumber yogurt dip.
