Description Crispy, healthy, and easy zucchini fries made in an air fryer, perfect for snacking or as a side dish.

Ingredients

  • 2 medium zucchini, about 8 inches long
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Olive oil spray
  • Your favorite dipping sauce (marinara, ranch, sriracha mayo, etc.)

Instructions

  1. Wash and trim the zucchinis under cold running water and trim off both ends.
  2. Slice each zucchini lengthwise into 1/2-inch-thick planks, then stack and cut those planks into 1/2-inch-thick sticks to create fries.
  3. Transfer the cut zucchini fries to a colander, sprinkle with 1/2 teaspoon of salt, toss gently, and let sit for 15–20 minutes to draw out moisture.
  4. Rinse the zucchini under cold water to remove the excess salt, then pat them really dry with paper towels.
  5. In a shallow dish, whisk together the flour, garlic powder, onion powder, paprika, black pepper, and salt.
  6. In a separate shallow dish, beat the eggs until light and frothy.
  7. In a third shallow dish, mix the panko breadcrumbs, grated Parmesan cheese, and Italian seasoning.
  8. Coat each zucchini fry in the flour mixture, shaking off any excess, then dip in egg and coat in the panko mixture.
  9. Preheat your air fryer to 400°F (200°C).
  10. Lightly spray the air fryer basket with olive oil spray and arrange the breaded zucchini fries in a single layer without overcrowding.
  11. Lightly mist the fries with olive oil spray.
  12. Cook at 400°F (200°C) for 8–10 minutes, flipping halfway through.
  13. Check for doneness — the zucchini should be tender and the breadcrumbs golden brown. If not crispy, air fry an additional minute or two.
  14. Serve while hot with your choice of dipping sauces.
