Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1 cup cherries, pitted and chopped
  • 1/2 cup powdered sugar
  • 1 tablespoon vanilla bean paste or seeds from 1 vanilla bean
  • 1 – 2 tablespoons milk, to adjust glaze consistency

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Cream the softened butter and sugar together until light and fluffy.
  3. Add the eggs, vanilla extract, and almond extract, mixing well.
  4. In another bowl, combine the all-purpose flour, almond flour, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring to combine.
  6. Fold in the chopped cherries.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes or until a toothpick comes out clean.
  9. Allow the loaf to cool completely before glazing.
  10. For the glaze, whisk together the powdered sugar, vanilla bean paste, and enough milk to achieve a smooth consistency.
  11. Drizzle the glaze over the cooled loaf before slicing and serving.
