- 1 lb ground beef
- 1 chopped onion
- 2 cloves minced garlic
- Salt to taste
- Pepper to taste
- 1 tsp dried thyme
- 2 cups assorted vegetables (carrots, corn, green beans)
- 1 can cream of mushroom soup
- 1 cup cooked rice or pasta (optional)
- 2 cups shredded cheese (cheddar or your favorite)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef with chopped onion and minced garlic. Season with salt, pepper, and thyme.
- Stir in the assorted vegetables and cook until tender.
- Mix in the cream of mushroom soup and optional cooked rice or pasta.
- Pour the mixture into a greased baking dish and spread evenly.
- Top with a generous layer of shredded cheese.
- Bake for 25 to 30 minutes until the cheese is bubbly and golden.
- Allow to cool slightly before serving.
Notes
Serve alongside a green salad or bread. This casserole can be made ahead of time and stored in the fridge for up to 4 days or frozen for 2 months.
