Delicious apple bread combining sweet apples and cinnamon, perfect for breakfast or an afternoon snack.

- ½ cup brown sugar
- 1 ½ teaspoons ground cinnamon
- 2 large eggs (room temperature)
- ½ cup granulated sugar
- ½ cup butter (melted)
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 cups chopped apples (choose from Pink Lady, Gala, or Honeycrisp – peeled and chopped, about 2 apples)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8 x 5-inch loaf pan or line it with parchment paper.
- In a small bowl, whisk together the brown sugar and cinnamon, then set it aside.
- In a large mixing bowl, whisk the eggs and granulated sugar until fully combined. Stir in the melted butter and vanilla extract, mixing until smooth.
- Gradually add the all-purpose flour, baking powder, baking soda, and salt. Mix until just combined.
- Gently fold in the chopped apples, ensuring they’re evenly distributed throughout the batter.
- Pour half of the batter into the prepared loaf pan. Sprinkle three-quarters of the brown sugar mixture over this layer.
- Carefully spread the rest of the batter on top of the cinnamon-sugar layer.
- Sprinkle the remaining brown sugar and cinnamon mixture over the top and swirl it into the batter.
- Bake in the preheated oven for 35 to 45 minutes, until the top is golden and a toothpick inserted comes out clean.
- Let the bread cool completely in the pan before slicing.

Store in an airtight container for up to 3 days, refrigerate for about a week or freeze for up to 3 months.
