Description

Delicious apple bread combining sweet apples and cinnamon, perfect for breakfast or an afternoon snack.


Ingredients

  • ½ cup brown sugar
  • 1 ½ teaspoons ground cinnamon
  • 2 large eggs (room temperature)
  • ½ cup granulated sugar
  • ½ cup butter (melted)
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups chopped apples (choose from Pink Lady, Gala, or Honeycrisp – peeled and chopped, about 2 apples)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8 x 5-inch loaf pan or line it with parchment paper.
  2. In a small bowl, whisk together the brown sugar and cinnamon, then set it aside.
  3. In a large mixing bowl, whisk the eggs and granulated sugar until fully combined. Stir in the melted butter and vanilla extract, mixing until smooth.
  4. Gradually add the all-purpose flour, baking powder, baking soda, and salt. Mix until just combined.
  5. Gently fold in the chopped apples, ensuring they’re evenly distributed throughout the batter.
  6. Pour half of the batter into the prepared loaf pan. Sprinkle three-quarters of the brown sugar mixture over this layer.
  7. Carefully spread the rest of the batter on top of the cinnamon-sugar layer.
  8. Sprinkle the remaining brown sugar and cinnamon mixture over the top and swirl it into the batter.
  9. Bake in the preheated oven for 35 to 45 minutes, until the top is golden and a toothpick inserted comes out clean.
  10. Let the bread cool completely in the pan before slicing.
