Description

Tender pork shoulder braised in apple cider for a flavorful, comforting dish, perfect for feeding a crowd.


Ingredients

  • 34 lb pork shoulder
  • 12 cups apple cider
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 sprigs thyme
  • 2 sprigs rosemary
  • Salt, to taste
  • Pepper, to taste
  • 12 cups chicken broth
  • 2 carrots, chopped
  • 2 stalks celery, chopped

Instructions

  1. Season the pork shoulder with salt and pepper.
  2. In a large pot, heat oil over medium-high heat and brown the pork on all sides. Remove and set aside.
  3. Add chopped onion, garlic, carrots, and celery to the pot and sauté until softened.
  4. Deglaze the pot with apple cider and scrape up any browned bits.
  5. Return the pork to the pot, add thyme, rosemary, and chicken broth.
  6. Cover and simmer on low heat for several hours until the pork is tender.
  7. Serve with the braising liquid.
