Ingredients

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup applesauce
  • 1/2 cup chopped apples
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, combine cottage cheese, applesauce, and eggs, mixing well.
  3. In another bowl, mix the dry ingredients: flour, sugar, cinnamon, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Gently fold in chopped apples and vegetable oil.
  6. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
