- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1 teaspoon baking powder

- 1 teaspoon cinnamon

- 1 large egg
- 1/2 cup unsweetened applesauce
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 cup diced apples
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with liners.
- In a large bowl, combine the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk together the egg, applesauce, milk, and vegetable oil.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the diced apples.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
