- 1 1/4 cups buttermilk
- 1 large egg
- 1/4 cup melted unsalted butter

Instructions
- Wash, peel, core, and finely dice the apples.
- Melt the butter in a skillet over medium heat.
- Add the diced apples and sauté for 3 to 5 minutes until softened.
- Stir in brown sugar, cinnamon, and nutmeg, coating the apples.
- Pour in lemon juice and water/apple cider; simmer until thickened.
- Stir in vanilla extract and set the apple mixture aside.
- In a bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
- In another bowl, mix buttermilk, egg, and vanilla extract with melted butter.
- Pour wet ingredients into dry ingredients and fold until just combined.
- Let the batter rest for 5 to 10 minutes.
- Preheat a griddle or skillet over medium-low heat and grease lightly.
- Ladle 1/4 cup of batter onto the griddle, let it spread naturally.
- Cook until bubbles form, then flip and cook until golden brown.
- Keep cooked pancakes warm in the oven.
- Serve pancakes topped with the apple cinnamon mixture and maple syrup.
Notes
For fluffier pancakes, do not skip the batter resting time. Use fresh apples for the best flavor.
