Description

Ingredients

  • 2 medium apples (Fuji, Honeycrisp, or Granny Smith), peeled and diced
  • 2 tablespoons unsalted butter
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons water or apple cider
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 large egg
  • 1/4 cup melted unsalted butter
  • Maple syrup, for serving
  • Powdered sugar, for garnish (optional)
  • Whipped cream, for garnish (optional)

Instructions

  1. Wash, peel, core, and finely dice the apples.
  2. Melt the butter in a skillet over medium heat.
  3. Add the diced apples and sauté for 3 to 5 minutes until softened.
  4. Stir in brown sugar, cinnamon, and nutmeg, coating the apples.
  5. Pour in lemon juice and water/apple cider; simmer until thickened.
  6. Stir in vanilla extract and set the apple mixture aside.
  7. In a bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
  8. In another bowl, mix buttermilk, egg, and vanilla extract with melted butter.
  9. Pour wet ingredients into dry ingredients and fold until just combined.
  10. Let the batter rest for 5 to 10 minutes.
  11. Preheat a griddle or skillet over medium-low heat and grease lightly.
  12. Ladle 1/4 cup of batter onto the griddle, let it spread naturally.
  13. Cook until bubbles form, then flip and cook until golden brown.
  14. Keep cooked pancakes warm in the oven.
  15. Serve pancakes topped with the apple cinnamon mixture and maple syrup.

Notes

For fluffier pancakes, do not skip the batter resting time. Use fresh apples for the best flavor.
