Ingredients

  • 9 -inch pie crust ( 2 discs)
  • ¼ cup unsalted butter
  • 8 cups apples, peeled, cored, and thinly sliced
  • ⅔ cup brown sugar
  • 1 tablespoon all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon lemon juice
  • ¼ teaspoon salt
  • 1 egg (for egg wash)
  • 1 teaspoon water
  • Coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Melt butter in a pot over medium-low heat. Add apples, brown sugar, flour, cinnamon, lemon juice, and salt. Cook for 8-10 minutes until apples soften. Remove from heat and let cool.
  3. Roll out one disc of dough to fit the pie plate and transfer it into the plate.
  4. Whisk egg and water together for the egg wash.
  5. Transfer cooled apple mixture into prepared crust. Roll out the second dough disc and cover the pie, cutting vents for steam.
  6. Brush with egg wash and sprinkle with coarse sugar if desired.
  7. Bake at 425°F for 15 minutes, then lower to 350°F (175°C) and bake until crust is golden and filling bubbles, about 40 minutes.
  8. Let cool before serving.
