- 9-inch pie crust (2 discs)
- ¼ cup unsalted butter
- 8 cups apples, peeled, cored, and thinly sliced
- ⅔ cup brown sugar
- 1 tablespoon all-purpose flour
- 2 teaspoons cinnamon
- 1 teaspoon lemon juice
- ¼ teaspoon salt
- 1 egg (for egg wash)
- 1 teaspoon water
- Coarse sugar (optional, for sprinkling)
Instructions
- Preheat oven to 425°F (220°C).
- Melt butter in a pot over medium-low heat. Add apples, brown sugar, flour, cinnamon, lemon juice, and salt. Cook for 8-10 minutes until apples soften. Remove from heat and let cool.
- Roll out one disc of dough to fit the pie plate and transfer it into the plate.
- Whisk egg and water together for the egg wash.
- Transfer cooled apple mixture into prepared crust. Roll out the second dough disc and cover the pie, cutting vents for steam.
- Brush with egg wash and sprinkle with coarse sugar if desired.
- Bake at 425°F for 15 minutes, then lower to 350°F (175°C) and bake until crust is golden and filling bubbles, about 40 minutes.
- Let cool before serving.
Notes
For the best flavor, mix tart and sweet apples. Cool the pie for 2 hours before slicing.
