- 1/2 cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1/4 cup (50g) brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups (180g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 medium apple, peeled and finely diced
- 2 tbsp (25g) granulated sugar (for topping)
- 1 tsp ground cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper for easy removal.
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, salt, ground cinnamon, and ground nutmeg.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the diced apple until evenly distributed.
- Spread the batter evenly into the prepared pan.
- In a small bowl, mix together the topping sugar and ground cinnamon; sprinkle over the batter.
- Bake for 25-30 minutes or until golden edges form and a toothpick inserted comes out clean.
- Allow to cool completely before cutting and serving.
Notes
Serve with vanilla ice cream or whipped cream. Store in an airtight container for up to 3 days at room temperature or 1 week in the refrigerator.
