Description

A warm, comforting dessert that celebrates the flavors of autumn with honey crisp apples and a blend of warm spices.


Ingredients

  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 1/8 tsp ground cloves
  • 2/3 cup vegetable oil
  • 2 large eggs, room temperature
  • 3/4 cup brown sugar, packed
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1 tsp pure vanilla extract
  • 23 large honey crisp apples, grated (about 1 1/2 cups)
  • 1/4 cup salted butter
  • 1/2 cup dark brown sugar, packed
  • 2 Tbsp heavy cream
  • 1/2 tsp pure vanilla extract
  • 1 cup powdered sugar, sifted

Instructions

  1. Preheat the oven to 350°F. Line a 9×9-inch light-colored nonstick pan with parchment paper and set aside.
  2. In a large bowl, whisk together the dry ingredients: flour, baking soda, salt, cinnamon, ginger, nutmeg, allspice, and cloves.
  3. In another bowl, whisk together the wet ingredients: vegetable oil, eggs, brown sugar, granulated sugar, sour cream, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and fold until just combined.
  5. Fold in the grated apples.
  6. Turn out the cake batter into the prepared pan.
  7. Bake for 35-40 minutes or until a toothpick comes out clean. Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
  8. For the icing, melt the butter, brown sugar, and heavy cream in a saucepan over medium heat. Whisk until combined and boil gently.
  9. Remove from heat and whisk in vanilla and powdered sugar.
  10. Pour the icing over the warm cake.
  11. Slice and enjoy warm!

Notes

For a more intense apple flavor, mix different types of apples. Serve warm with vanilla ice cream or whipped cream.
