  • Freshly ground black pepper, to taste
  • 1 red onion, cut into large chunks
  • 1 red bell pepper, cut into large pieces
  • 1 green bell pepper, cut into large pieces
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper in a mixing bowl. Add chicken chunks and ensure they are well-coated. Cover and refrigerate for at least 1 hour, or overnight.
  2. Preheat grill to medium-high heat. Thread chicken, onions, and peppers onto skewers.
  3. Grill skewers, turning occasionally, until chicken is browned and cooked through, about 12-15 minutes. Juices should run clear.
