Ingredients

- 4 bone-in pork chops (1 inch thick)
- 3 tbsp olive oil
- 4 cloves garlic, minced
- Juice and zest of 1 lemon
- 2 tbsp parsley, chopped
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- 1 tbsp butter (optional)
- Lemon wedges, for serving
Instructions
- Pat pork chops dry and season with salt, pepper, oregano, and red pepper flakes.
- Heat olive oil in a skillet. Sear pork chops 3–4 minutes per side until golden.
- Remove chops. Add garlic to skillet and sauté for 30 seconds.
- Stir in lemon juice, zest, and parsley; simmer for 1 minute.
- Return chops to pan, spoon sauce over, and cook for 1 minute more.
- Swirl in butter if desired. Serve hot with lemon wedges.
Notes
For a good sear, dry the chops well before seasoning. Using a cast-iron skillet enhances caramelization.
