Ingredients

  • 4 bone-in pork chops (1 inch thick)
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 2 tbsp parsley, chopped
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 tbsp butter (optional)
  • Lemon wedges, for serving

Instructions

  1. Pat pork chops dry and season with salt, pepper, oregano, and red pepper flakes.
  2. Heat olive oil in a skillet. Sear pork chops 3–4 minutes per side until golden.
  3. Remove chops. Add garlic to skillet and sauté for 30 seconds.
  4. Stir in lemon juice, zest, and parsley; simmer for 1 minute.
  5. Return chops to pan, spoon sauce over, and cook for 1 minute more.
  6. Swirl in butter if desired. Serve hot with lemon wedges.

Notes

For a good sear, dry the chops well before seasoning. Using a cast-iron skillet enhances caramelization.
