- 400g spaghetti
- 150g bacon, diced
- 2 large eggs
- 100g Parmesan cheese, grated
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving some pasta water.
- In a large skillet, cook the diced bacon over medium heat until crispy.
- Add the minced garlic to the skillet and sauté for 1 minute.
- In a bowl, whisk together the eggs and grated Parmesan cheese.
- Add the cooked spaghetti to the skillet with bacon and garlic, removing from heat.
- Quickly pour the egg and cheese mixture over the pasta, stirring continuously to create a creamy sauce. Add reserved pasta water as needed to reach desired consistency.
- Season with salt and pepper to taste.
- Serve immediately, garnished with chopped parsley.
Notes
Make sure to remove the skillet from heat before adding the egg mixture to prevent scrambling. Freshly grated Parmesan is recommended for the best flavor.
