A comforting one-pot soup combining bacon, cheese, and gnocchi for a warm and filling dish.

- 8–10 slices bacon, cooked and chopped
- 1 tbsp butter or olive oil
- 1 large onion, diced
- 2 large carrots, peeled and sliced
- 4 cups chicken broth
- 1–2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder (or 4 cloves minced garlic)
- ¼ tsp dried thyme
- ½–1 tsp red chili flakes (optional)
- 16 oz gnocchi
- 2 cups heavy cream or half-and-half
- 2 cups shredded cheddar cheese (medium or sharp)
Instructions
- Cook the bacon in a pan until crispy, chop it, and set aside.
- In a large pot, heat the butter or olive oil over medium heat. Add the diced onions and sliced carrots, cooking them until tender.
- Pour in the chicken broth and bring it to a simmer.
- Stir in the heavy cream, seasonings, and shredded cheese, mixing well until the cheese melts.
- Add the gnocchi and cook for about 2 minutes, or until they become soft.
- Stir in the chopped bacon, adjust the seasoning if necessary, and serve hot.
Notes
Top with additional shredded cheese or fresh herbs for extra flavor. Pair with crusty bread or a green salad.
