- 4 chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 2 cups shredded mozzarella cheese
- 2 eggs
- 1 tablespoon Italian seasoning
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each chicken breast into the egg, then coat with the breadcrumb mixture.
- Place the chicken breasts on a greased baking sheet.
- Spray the tops with olive oil.
- Bake for 20 minutes.
- Remove from oven and spoon marinara sauce over each breast, then top with mozzarella cheese.
- Return to oven and bake for an additional 10-15 minutes, until cheese is melted and chicken is cooked through.
- Serve and enjoy!
Notes
For even cooking, pound chicken breasts to an even thickness. You can substitute chicken thighs and experiment with different breadcrumbs.
