Baked Crunchy Hot Honey Chicken

Description

A delicious and simple meal featuring crispy chicken coated in cornflakes with a sweet and spicy hot honey sauce.


Ingredients

  • 6 cups cornflakes (use gluten-free, if needed)
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 large eggs, beaten
  • 2 tablespoons hot sauce
  • 2 pounds chicken breast tenderloins
  • Extra virgin olive oil, for drizzling
  • 1/2 cup honey
  • 23 tablespoons hot sauce
  • 13 teaspoons cayenne pepper
  • 3/4 teaspoon chipotle chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Sea salt
  • Fresh thyme, cilantro, or parsley, for serving

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. In a food processor, combine the cornflakes, parmesan, paprika, onion powder, garlic powder, and a pinch of salt. Pulse until you have fine crumbs.
  3. Pour the crumbs into a shallow bowl.
  4. Beat the eggs in another bowl, then add the hot sauce and chicken. Toss well to coat the chicken.
  5. Dredge the chicken in the crumb mixture, making sure to cover it fully. Place the coated chicken on the prepared baking sheet.
  6. For a thicker coating, dip the chicken back through the eggs and then through the crumbs a second time. Drizzle with olive oil.
  7. Bake for 20-25 minutes, or until the chicken is crisp all around.
  8. While the chicken is baking, prepare the sauce in a saucepan, warming honey, hot sauce, cayenne pepper, chili powder, onion powder, garlic powder, and a pinch of salt.
  9. Drizzle the warm sauce over the chicken when it’s done. Top with fresh herbs, if desired.

Notes

For a gluten-free option, use gluten-free cornflakes. Adjust the spice level with hot sauce and cayenne pepper to your preference.
