Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup chopped pecans
  • 1/2 cup corn syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, whisk together flour, oats, and baking soda.
  4. In another bowl, cream butter, brown sugar, and granulated sugar until fluffy.
  5. Add egg and vanilla to the butter mixture, mixing until smooth.
  6. Combine wet and dry ingredients until just mixed.
  7. Fold in pecans and corn syrup.
  8. Scoop dough onto baking sheet, spacing 2 inches apart.
  9. Bake for 10-12 minutes until edges are golden.
  10. Cool on baking sheet for 5 minutes, then transfer to wire rack.
