- 4 boneless, skinless chicken breasts
- 2 cups mixed vegetables (e.g., bell peppers, zucchini, carrots), chopped
- 1/2 cup balsamic vinegar
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the bottom of your slow cooker in a single layer.
- Scatter the mixed vegetables evenly on top of the chicken.
- In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper.
- Pour the balsamic mixture over the chicken and vegetables.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken reaches 165°F (74°C).
- Serve warm, spooning the sauce and vegetables over the chicken.
Notes
Layering the chicken on the bottom prevents the veggies from turning mushy. For firmer vegetables, add them halfway through the cooking time. Always check the chicken’s internal temperature.
