Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan with grease and parchment paper.
  2. Mash the bananas in a medium mixing bowl until smooth, leaving some lumps for texture.
  3. Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy (3-4 minutes).
  4. Add the eggs one at a time, mixing well after each, and then mix in the vanilla extract.
  5. Fold the mashed bananas into the mixture gently.
  6. In a separate bowl, whisk together the flour, baking soda, and salt.
  7. Gradually add the dry ingredients to the banana batter, alternating with sour cream, mixing until just combined.
  8. Fold in the optional add-ins like chopped nuts or chocolate chips.
  9. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. Optional: Top with cream cheese frosting or a light dusting of powdered sugar before serving.
  12. Serve warm or at room temperature, with ice cream or whipped cream if desired.

Notes

  1. Notes
  2. Use overripe bananas for the best flavor. Customize with different add-ins, and don’t overmix the batter to keep the cake fluffy.
