Description
A moist and flavorful banana cake that’s perfect for any occasion, easily customizable with add-ins like nuts or chocolate chips.
Ingredients
Scale
- 3 ripe bananas
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup sour cream
- Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan with grease and parchment paper.
- Mash the bananas in a medium mixing bowl until smooth, leaving some lumps for texture.
- Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy (3-4 minutes).
- Add the eggs one at a time, mixing well after each, and then mix in the vanilla extract.
- Fold the mashed bananas into the mixture gently.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the banana batter, alternating with sour cream, mixing until just combined.
- Fold in the optional add-ins like chopped nuts or chocolate chips.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Optional: Top with cream cheese frosting or a light dusting of powdered sugar before serving.
- Serve warm or at room temperature, with ice cream or whipped cream if desired.
Notes
Use overripe bananas for the best flavor. Customize with different add-ins, and don’t overmix the batter to keep the cake fluffy.
