Description

A warm and comforting dessert combining caramelized bananas with a tender, golden cobbler topping, served best with vanilla ice cream.


Ingredients

  • 4 ripe bananas, sliced
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup dark rum
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/2 cup heavy cream (optional, for serving)
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, melt the butter and stir in the brown sugar until combined. Add the sliced bananas and cook for 2-3 minutes until caramelized. Carefully stir in the rum and remove from heat.
  3. In a separate bowl, mix together the flour, granulated sugar, baking powder, and salt. Pour in the milk and mix until just combined.
  4. Pour the batter into a greased baking dish. Spoon the banana mixture over the top.
  5. Bake in the preheated oven for 30-35 minutes or until the cobbler is golden brown.
  6. Serve warm with a scoop of vanilla ice cream and a drizzle of the remaining caramel sauce from the pan.

Notes

Use ripe bananas with freckled skins for best results. Substitute rum with orange juice if avoiding alcohol.
