For the Bowl:
- 2 chicken breasts, cooked and cubed
- 2 cups cooked rice (jasmine, brown, or cauliflower)
- 1 cup shredded purple cabbage
- 1 carrot, julienned
- 1 cucumber, thinly sliced

- Optional: avocado slices, pickled onion, sesame seeds, edamame
Bang Bang Sauce:
- ½ cup mayonnaise (or Greek yogurt)
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust to taste)
Instructions
- Cook the Chicken: Grill, bake, or air-fry seasoned chicken breasts until fully cooked. Cut into cubes or strips.
- Prepare the Rice: Cook jasmine, brown, or cauliflower rice according to package instructions.
- Make the Bang Bang Sauce: In a small bowl, mix mayonnaise (or yogurt), sweet chili sauce, and sriracha until smooth and well blended.
- Assemble the Bowl: In serving bowls, start with a layer of rice. Top with chicken, shredded cabbage, julienned carrots, cucumber slices, and green onions.
- Drizzle generously with Bang Bang sauce. Add optional toppings such as avocado slices, sesame seeds, pickled onion, or edamame if desired. Serve immediately.
Notes
Use cauliflower rice for a lower-carb version. The sauce can be made ahead and stored in the fridge for up to 5 days.
