  • 1 ½ pounds boneless skinless chicken tenderloins

  • ¾ cup (94 g) all-purpose flour
  • ½ cup (64 g) cornstarch
  • 1 large egg (room temperature)
  • 1 tablespoon Sriracha
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper (optional)
  • 2 cups (216 g) panko breadcrumbs (plain)
  • Canola oil (for frying)
  • Parsley (chopped, for garnish)

Instructions

  1. Make the Bang Bang Sauce: In a bowl, mix together mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Adjust the Sriracha to get your desired level of spiciness.
  2. Prepare the Chicken: In a separate bowl, soak the chicken tenderloins in buttermilk for at least 30 minutes.
  3. Coat the Chicken: In another bowl, combine flour, cornstarch, egg, Sriracha, garlic powder, kosher salt, black pepper, and cayenne pepper (if using). Coat each chicken piece with this mixture.
  4. Add Breadcrumbs: Roll each coated chicken piece in panko breadcrumbs for a nice crunch.
  5. Fry the Chicken: Heat canola oil in a large pan over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 5-7 minutes per side.
  6. Serve: Transfer the chicken to a plate lined with paper towels. Drizzle with the Bang Bang sauce and garnish with chopped parsley.
