- 1 lb ground turkey
- 2 cups cooked jasmine rice
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 cup chopped red bell pepper
- 1 cup chopped carrots
- 1 cup chopped broccoli
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Cook the jasmine rice according to package instructions and keep it warm.
- In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, soy sauce, and lime juice to make the bang bang sauce.
- Heat olive oil in a large skillet over medium-high heat, add ground turkey, and cook until browned, about 6–8 minutes.
- Add red bell pepper, carrots, and broccoli to the skillet and sauté for 5–7 minutes until tender-crisp.
- Reduce heat to low, pour in the bang bang sauce, and stir to coat turkey and vegetables; warm through for 1–2 minutes.
- Serve the mixture over jasmine rice, garnished with green onions and sesame seeds.
Notes
Adjust sauce ingredients to taste if desired. For a lighter version, mix mayonnaise with Greek yogurt.
