Description

Crispy and tender salmon bites with a sweet and spicy Bang Bang sauce, perfect for snacks or appetizers.


Ingredients

  • 1 lb fresh salmon (skinless and cut into bite-sized cubes)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) or set your air fryer to the same temperature.
  2. In a bowl, mix the garlic powder, smoked paprika, salt, and black pepper. Toss the salmon cubes in the seasoning until well coated.
  3. Place the panko breadcrumbs in a shallow dish. Add the seasoned salmon cubes to the breadcrumbs, pressing gently to coat.
  4. For baking, place the coated salmon on a baking sheet lined with parchment paper. Drizzle with olive oil. Bake for about 12-15 minutes or until crispy and cooked through. For air-frying, arrange the salmon bites in the basket in a single layer and cook for about 8-10 minutes, shaking halfway through.
  5. In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, honey (if using), and lime juice until smooth.
  6. In serving bowls, place a layer of jasmine rice (or cauliflower rice). Top with shredded purple cabbage, sliced avocado, shredded carrots, and green onions. Add the crispy salmon bites on top and drizzle with Bang Bang sauce. Garnish with fresh cilantro and sesame seeds.

Notes

For extra flavor, marinate the salmon in your favorite sauce for about 30 minutes before coating it. Adjust the spiciness of the sauce by adding more or less sriracha. For a vegetarian option, use baked tofu instead of salmon.
