- 2 lbs beef (chuck or brisket), cut into cubes
- 2 cups orzo pasta
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 4 cups beef broth
- 1 teaspoon dried oregano
- 1 teaspoon cinnamon
- Salt and pepper to taste
- 1 cup grated cheese (kefalotyri or parmesan)
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sauté until softened.
- Add the beef cubes and brown on all sides.
- Stir in the diced tomatoes, beef broth, oregano, cinnamon, salt, and pepper.
- Bring to a simmer, then cover and reduce heat. Cook for 90 to 120 minutes until the beef is tender.
- Add the orzo pasta to the pot, stirring to combine.
- Cook for an additional 10-12 minutes until the orzo is al dente.
- Serve topped with grated cheese.
Notes
For better flavor and tenderness, use good quality beef. Optionally, add vegetables like carrots or bell peppers or a splash of red wine for extra flavor.
