Description

Ingredients

  • 2 lbs beef (chuck or brisket), cut into cubes
  • 2 cups orzo pasta
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 1 cup grated cheese (kefalotyri or parmesan)
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until softened.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the diced tomatoes, beef broth, oregano, cinnamon, salt, and pepper.
  5. Bring to a simmer, then cover and reduce heat. Cook for 90 to 120 minutes until the beef is tender.
  6. Add the orzo pasta to the pot, stirring to combine.
  7. Cook for an additional 10-12 minutes until the orzo is al dente.
  8. Serve topped with grated cheese.

Notes

For better flavor and tenderness, use good quality beef. Optionally, add vegetables like carrots or bell peppers or a splash of red wine for extra flavor.
