Ingredients

  • 1 ½ cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar
  • Ground cinnamon (optional)
  • 1 cup mixed berries (fresh or frozen)
  • 1 large ripe peach, peeled and diced
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 3 packages (8 ounces each) cream cheese, softened
  • 1 ½ cups granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • 4 large eggs
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, ¼ cup of sugar, and cinnamon (if desired). Mix well and press into the bottom of a 9-inch springform pan. Bake for about 8-10 minutes until golden, then let cool.
  3. In a saucepan, combine the mixed berries, diced peach, 2 tablespoons of sugar, and lemon juice. Heat over medium until simmering. Mix cornstarch with water and add to the fruit mixture, stirring until thickened. Remove from heat and cool slightly.
  4. In a large bowl, beat the cream cheese until smooth. Gradually add 1 ½ cups of sugar, vanilla, and almond extract, mixing until fluffy. Add eggs one at a time, then stir in the sour cream.
  5. Pour half of the cheesecake filling over the cooled crust. Spoon lumps of the berry peach mixture over it, then pour the remaining filling on top. Swirl in more berry peach mixture.
  6. Bake for 55-70 minutes until edges are set but center is slightly jiggly. Turn off the oven, crack the door, and let it cool for 1 hour inside.
  7. Cool completely at room temperature, cover, and refrigerate for at least 4 hours or overnight.
  8. Release from the springform pan and garnish with fresh berries and peach slices before serving.
