Description

Sweet and wholesome blueberry oatmeal bars that are perfect for any time of day, combining oats with a jammy blueberry filling for a cozy treat.


Ingredients

  • 1 ½ cups old-fashioned oats
  • 1 ¼ cups all-purpose flour
  • ½ cup brown sugar
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¾ cup melted butter or coconut oil
  • 2 cups blueberries
  • 2 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, mix the oats, flour, brown sugar, baking powder, cinnamon, and salt until well combined.
  3. Add melted butter or coconut oil to the dry mix and stir until crumbly.
  4. Press two-thirds of the oat mixture into the bottom of the prepared pan to form the crust.
  5. In a medium bowl, toss blueberries with granulated sugar, cornstarch, lemon juice, and vanilla extract.
  6. Spread the blueberry mixture over the crust.
  7. Crumble the reserved oat mixture over the blueberry filling.
  8. Bake for 30-35 minutes until the top is golden and filling is bubbly.
  9. Allow to cool at room temperature for 1-2 hours before slicing.

Notes

Store in an airtight container at room temperature for up to 2 days or freeze for up to 3 months. For thicker filling, gently mash half the blueberries before mixing.
