A delicious and easy crustless quiche made with cottage cheese and fresh spinach, perfect for brunch or any meal.

- 4 cups fresh spinach
- 1 cup cottage cheese
- 4 large eggs
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the fresh spinach until wilted.
- In a bowl, combine the cottage cheese, eggs, milk, Parmesan cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
- Add the wilted spinach to the mixture and stir until well combined.
- Pour the mixture into a greased pie dish.
- Bake in the preheated oven for 30-35 minutes or until set.
- Let cool for a few minutes before slicing and serving.
Notes
Add extra Parmesan on top for the last five minutes of baking for a more luxurious finish.
