Indulge in the warmth of an Italian breakfast idea with the Best Potato Frittata. This simple frittata recipe blends creamy Yukon gold potatoes, savory gruyere cheese, and fresh spinach to create a comforting and versatile fritata recipe with potato that works both as a delightful Frittata Dinner Recipe and an impressive brunch dish. The perfect harmony of flavors in this frittata with potatoes makes it an ideal frittata side dish or standalone culinary masterpiece.

Ingredients

Scale
  • 2 diced strips of thick-cut bacon (for a vegetarian option, see notes)
  • 2 medium yukon gold potatoes, peeled and cut into ½-inch pieces (approximately 2 cups)
  • 8 large eggs
  • 3 tablespoons nonfat milk (or any milk you prefer)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon black pepper, ground
  • 1/3 cup shredded gruyere cheese (or sharp cheddar or any similar melting cheese)
  • 1 cup fresh spinach, roughly chopped
  • 1/2 cup green onions, finely chopped (around 3 medium-size)

Instructions

  1. Preheat oven to 350°F (175°C). In a skillet, cook diced bacon over medium heat until crispy. Remove and set aside.
  2. In the same skillet, add yukon gold potatoes and cook in bacon fat until tender and lightly browned, about 10 minutes.
  3. In a mixing bowl, whisk together eggs, milk, dijon mustard, salt, and pepper.
  4. Spread cooked potatoes evenly across the skillet, then pour the egg mixture over them. Reduce heat to low and allow eggs to cook gently around the edges without stirring.
  5. Sprinkle gruyere cheese, spinach, and green onions over the top. Transfer the skillet to the oven and bake for 10-15 minutes, until eggs are fully set and top is golden brown.
  6. Remove from oven and let cool slightly. Slice into wedges and serve warm, garnished with extra green onions if desired.

Notes

  • For vegetarians, omit bacon and use olive oil to cook the potatoes.
  • Ensure all ingredients are pre-cooked where necessary to maintain consistency.
  • To keep your frittata fluffy, avoid overbeating the eggs during preparation.
