Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups potatoes, cubed
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Pour in the vegetable broth and add the diced tomatoes, potatoes, zucchini, and green beans.
- Add the chickpeas, thyme, basil, salt, and pepper.
- Bring the stew to a boil, then reduce the heat and simmer for about 30 minutes, or until the vegetables are tender.
- Taste and adjust seasonings as needed.
- Serve hot, garnished with fresh parsley.
Notes
Feel free to add your favorite vegetables or whatever you have on hand. This stew is gluten-free and can also be cooked in a slow cooker.
