Description

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups potatoes, cubed
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Pour in the vegetable broth and add the diced tomatoes, potatoes, zucchini, and green beans.
  4. Add the chickpeas, thyme, basil, salt, and pepper.
  5. Bring the stew to a boil, then reduce the heat and simmer for about 30 minutes, or until the vegetables are tender.
  6. Taste and adjust seasonings as needed.
  7. Serve hot, garnished with fresh parsley.
