Ingredients

- 1 can black beans, rinsed and drained
- 1 cup rice
- 1 lb sausage, sliced (your choice: spicy or mild)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped (any color works!)
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- Olive oil for cooking
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, and bell pepper; sauté until softened.
- Add the sliced sausage and cook until browned.
- Stir in the cumin and smoked paprika, and cook for another minute.
- Add the rice, black beans, and chicken broth; bring to a boil.
- Reduce heat to low, cover the pot, and simmer for about 20 minutes or until rice is cooked.
- Season with salt and pepper to taste.
- Fluff with a fork and garnish with fresh cilantro if desired. Serve and enjoy!
Notes
For an added kick, incorporate diced jalapeños or hot sausage. Store leftovers in an airtight container in the fridge for 3-4 days.
