Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup rice
  • 1 pound sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, heat a bit of oil over medium heat. Add the sausage and cook until browned.
  2. Add the chopped onion and cook until translucent, then add the garlic and cook for another minute.
  3. Stir in the cumin and paprika, cooking for an additional minute to release the flavors.
  4. Add the rice, black beans, broth, salt, and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the liquid has been absorbed.
  6. Fluff the rice with a fork, garnish with cilantro, and serve.

Notes

For a spicier version, add some diced jalapeños or cayenne pepper while cooking. For a vegetarian option, replace the sausage with plant-based sausage or mushrooms.
