Description

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon black pepper
  • 1 tablespoon cornstarch
  • Salt to taste
  • Green onions, for garnish

Instructions

  1. In a large bowl, coat chicken pieces with soy sauce, black pepper, and cornstarch.
  2. Heat oil in a pan over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add garlic and ginger, sauté for 1 minute until fragrant.
  4. Add bell pepper, broccoli, and snap peas, stir-fry for another 3-4 minutes until veggies are tender-crisp.
  5. Season with additional salt if needed, and serve hot, garnished with green onions.
