- 1 lb chicken breast, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon black pepper
- 1 tablespoon cornstarch
- Salt to taste
- Green onions, for garnish
Instructions
- In a large bowl, coat chicken pieces with soy sauce, black pepper, and cornstarch.
- Heat oil in a pan over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
- Add garlic and ginger, sauté for 1 minute until fragrant.
- Add bell pepper, broccoli, and snap peas, stir-fry for another 3-4 minutes until veggies are tender-crisp.
- Season with additional salt if needed, and serve hot, garnished with green onions.
Notes
For best results, use fresh ingredients. You can serve this dish over rice, noodles, or a bed of greens.
