Ingredients

  • 2 cups high-quality white chocolate chips, divided
  • 1 cup (240ml) heavy cream
  • 2 tablespoons (30g) unsalted butter, softened
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon blue food coloring gel
  • Optional: 1-2 tablespoons non-alcoholic extract (e.g., peppermint, orange)
  • Optional: 1-2 tablespoons coconut oil or shortening
  • For decoration: Sparkling white or silver edible glitter
  • For decoration: White or blue sprinkles
  • For decoration: Small edible silver or gold stars

Instructions

  1. Finely chop 1 cup of the white chocolate chips and place into a heatproof mixing bowl. Heat the heavy cream in a saucepan over medium heat until it just simmers. Immediately pour the hot cream over the chocolate and let stand for 5 minutes. Stir until smooth and glossy; then add butter, vanilla, and sea salt.
  2. Add blue food coloring until the desired hue is achieved. Cover and cool at room temperature for 2-3 hours or refrigerate until firm enough to scoop.
  3. Line a baking sheet with parchment paper. Use a scoop to form smooth, round truffles from the ganache. Refrigerate for 30-60 minutes until firm.
  4. Melt the remaining white chocolate chips and optional coconut oil for coating. Set up a dipping station with wire rack and decorations.
  5. Dip cooled truffles into the melted chocolate, tapping off excess. Sprinkle with edible decorations before the coating sets.
  6. Allow truffles to set at room temperature for 30-60 minutes or refrigerate for faster results. Store in an airtight container in the refrigerator for up to 2 weeks and allow to come to room temperature before serving.

Notes

Can customize flavors with extracts and adjust the color intensity with food coloring. Avoid water around melting chocolate for best results.
