Ingredients

  • 2 cups low-fat cottage cheese

  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup rolled oats
  • 1/4 teaspoon salt
  • 1 1/2 cups fresh or frozen blueberries
  • 1/4 cup chopped nuts (optional)
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease an 8×8-inch or 9×9-inch baking dish.
  2. In a large bowl, beat the eggs until frothy, then add cottage cheese, almond milk, honey, vanilla extract, and cinnamon. Mix well.
  3. Stir in the rolled oats and salt, then gently fold in the blueberries and optional nuts and chia seeds.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 45-60 minutes or until the edges are set and golden brown.
