- 2 large eggs
- 2 cups low-fat cottage cheese
- 1/2 cup almond milk (or milk of your choice)
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/2 cup rolled oats
- 1/4 teaspoon salt
- 1 1/2 cups fresh or frozen blueberries
- 1/4 cup chopped nuts (optional)
- 1 tablespoon chia seeds (optional)
Instructions
- Preheat the oven to 375°F (190°C) and grease an 8×8-inch or 9×9-inch baking dish.
- In a large bowl, beat the eggs until frothy, then add cottage cheese, almond milk, honey, vanilla extract, and cinnamon. Mix well.
- Stir in the rolled oats and salt, then gently fold in the blueberries and optional nuts and chia seeds.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 45-60 minutes or until the edges are set and golden brown.
- Let cool on a wire rack for 15-20 minutes, then slice and serve as desired.
Notes
