- 2 1/2 cups all-purpose flour
- 2 tsp cornstarch
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 1 large egg
- 1 Tbsp lemon juice
- 1 Tbsp lemon zest
- 2 cups blueberries
- 1 cup powdered sugar
- 1 Tbsp heavy cream
- 1 Tbsp lemon juice
- Zest of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt until evenly combined.
- In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy, about 2–3 minutes.
- Add the granulated sugar and beat until light and fluffy, scraping the bowl as needed.
- Beat in the egg, then add lemon juice and zest; mix until well incorporated.
- Gradually combine the wet mixture with the dry ingredients, stirring until just mixed.
- Gently fold in the blueberries, being careful not to crush them.
- Scoop dough onto a prepared baking sheet, spacing each mound 2 inches apart.
- Bake for 12–15 minutes, or until edges are golden and centers are set but soft.
- Cool cookies on a wire rack.
- While cooling, whisk together the powdered sugar, heavy cream, lemon juice, and lemon zest for glaze. Drizzle over cooled cookies.
Notes
Use full-fat cream cheese for best results and ensure that butter and cream cheese are at the same softened room temperature.
