Description

Delicious and simple bars that blend breakfast and dessert, featuring rolled oats and fresh blueberries.


Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 cup honey or maple syrup
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix together the rolled oats, flour, brown sugar, baking powder, and salt.
  3. In another bowl, combine the melted butter, honey or syrup, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Gently fold in the blueberries.
  6. Spread the mixture evenly in the prepared baking dish.
  7. Bake for 25 to 30 minutes, or until golden brown.
  8. Allow to cool before cutting into bars.

Notes

For added crunch, consider adding chopped nuts or sunflower seeds. Makes a great snack or breakfast item.
