Ingredients

  • 2 cups fresh pineapple, diced
  • 1 cup fresh blueberries
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 1 small jalapeño, seeded and finely diced
  • Juice of 1 lime
  • ½ tsp salt
  • ¼ tsp black pepper
  • Tortilla chips (for serving)
  • Grilled chicken, fish, or tacos (optional)

Instructions

  1. Prepare the fruit and aromatics: Dice the fresh pineapple into small cubes, rinse and pat the blueberries dry, chop the red onion and cilantro, and mince the jalapeño.
  2. Combine ingredients in a large bowl: In a mixing bowl, add the diced pineapple, blueberries, chopped red onion, diced jalapeño, and cilantro.
  3. Season and brighten: Squeeze lime juice over the mixture and sprinkle with salt and black pepper.
  4. Gently fold to combine: Stir carefully to avoid smashing the blueberries.
