Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup uncooked orzo
  • 2 1/4 cups chicken broth
  • 1 (5.2 oz) package Boursin garlic & herb cheese
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 cup baby spinach
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the chicken into roughly 1-inch pieces and season with salt and pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and brown for 4-5 minutes, then set aside.
  3. Add minced garlic to the skillet and cook for 1 minute.
  4. Stir in uncooked orzo and toast briefly. Pour in chicken broth, scraping up any browned bits.
  5. Return chicken to the skillet. Add Boursin cheese, cherry tomatoes, and zucchini; stir gently.
  6. Cover the skillet and bake for 20 minutes.
  7. Remove cover, stir, fold in spinach, and return to the oven for another 10-15 minutes.
  8. Let rest for 5-10 minutes before garnishing with herbs and Parmesan. Serve directly from the skillet.
