A cozy one-pan dish featuring creamy Boursin cheese, tender chicken, and nutritious veggies, all baked to perfection with orzo.

- 1 lb boneless skinless chicken breast or thighs, diced
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 cup uncooked orzo
- 2 1/4 cups chicken broth
- 1 (5.2 oz) package Boursin garlic & herb cheese
- 1 cup cherry tomatoes, halved
- 1 zucchini, diced
- 1 cup baby spinach
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil or parsley for garnish
Instructions
- Preheat oven to 400°F (200°C). Cut chicken into 1-inch pieces and season with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook for 4-5 minutes until browned. Remove chicken from skillet and set aside.
- Lower heat and add garlic. Cook for 1 minute until fragrant.
- Add orzo to skillet and stir for 30 seconds. Then add chicken broth and stir to scrape up any browned bits.
- Return chicken to skillet, add Boursin, cherry tomatoes, and zucchini. Stir to combine.
- Cover and bake for 20 minutes.
- Remove from oven, stir in spinach, and bake uncovered for an additional 10-15 minutes until orzo is tender.
- Let rest for 5-10 minutes, garnish with basil or parsley, and serve.
Notes
For best results, do not skip preheating the oven and allow the dish to rest before serving.
