Description

A cozy one-pan dish featuring creamy Boursin cheese, tender chicken, and nutritious veggies, all baked to perfection with orzo.


Ingredients

  • 1 lb boneless skinless chicken breast or thighs, diced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 cup uncooked orzo
  • 2 1/4 cups chicken broth
  • 1 (5.2 oz) package Boursin garlic & herb cheese
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 cup baby spinach
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Cut chicken into 1-inch pieces and season with salt and pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook for 4-5 minutes until browned. Remove chicken from skillet and set aside.
  3. Lower heat and add garlic. Cook for 1 minute until fragrant.
  4. Add orzo to skillet and stir for 30 seconds. Then add chicken broth and stir to scrape up any browned bits.
  5. Return chicken to skillet, add Boursin, cherry tomatoes, and zucchini. Stir to combine.
  6. Cover and bake for 20 minutes.
  7. Remove from oven, stir in spinach, and bake uncovered for an additional 10-15 minutes until orzo is tender.
  8. Let rest for 5-10 minutes, garnish with basil or parsley, and serve.

Notes

For best results, do not skip preheating the oven and allow the dish to rest before serving.
