Ingredients

  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Pinch of red pepper flakes (optional)
  • ¾ cup milk (any type, dairy or non-dairy)
  • ½ cup olive oil
  • 2 large eggs, at room temperature
  • 1 cup (about 120g ) finely chopped fresh broccoli florets
  • ¾ cup (about 90g ) crumbled feta cheese
  • ¼ cup chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease an 8×8-inch pan.
  2. Steam broccoli florets until crisp-tender, about 3–5 minutes. Rinse under cold water and drain.
  3. Crumble feta into small pieces and allow eggs to reach room temperature.
  4. In a large bowl, mix flour, baking powder, salt, pepper, garlic powder, onion powder, and red pepper flakes.
  5. In a separate bowl, whisk milk, olive oil, and eggs until combined and slightly frothy.
  6. Mix wet ingredients into dry ingredients and stir until just combined.
  7. Fold in broccoli, feta, and parsley gently.
  8. Pour batter into the prepared pan and smooth the top.
  9. Bake for 25–30 minutes until edges are golden and a toothpick comes out clean.
  10. Let cool for 30–45 minutes before slicing into squares.
