- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Pinch of red pepper flakes (optional)
- 3/4 cup milk (any type, dairy or non-dairy)
- 1/2 cup olive oil
- 2 large eggs, at room temperature
- 1 cup finely chopped fresh broccoli florets
- 3/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat your oven to 375°F (190°C). Prepare an 8×8-inch baking pan by greasing it with olive oil or baking spray and optionally lining it with parchment paper.
- Steam the finely chopped broccoli florets until crisp-tender, about 3 to 5 minutes. Rinse under cold water and drain thoroughly. Pat dry with a towel.
- Crumble the feta cheese into small pieces.
- In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, onion powder, and red pepper flakes.
- In another bowl, whisk together the milk, olive oil, and the two eggs until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the steamed broccoli florets, crumbled feta, and optional parsley.
- Spread the batter evenly in the prepared baking pan and bake for 25 to 30 minutes until edges are golden and a toothpick comes out clean.
- Allow the brownies to cool in the pan for 30 to 45 minutes before slicing into squares.
Notes
Let them cool fully before slicing for neat squares. Can be enjoyed warm or cold.
