- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups vegetable broth
- 1 cup milk
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Stir in the broccoli and vegetable broth, and bring to a boil.
- Reduce heat and simmer until the broccoli is tender, about 10 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the milk and cheese until melted and well combined.
- Season with salt and pepper to taste. Serve hot.
Notes
For a richer flavor, add a pinch of nutmeg or some herbs like thyme. Customize with other vegetables or spices according to your taste.
