Description

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup milk

  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Stir in the broccoli and vegetable broth, and bring to a boil.
  4. Reduce heat and simmer until the broccoli is tender, about 10 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the milk and cheese until melted and well combined.
  7. Season with salt and pepper to taste. Serve hot.
